Sugar Free Oats Muffins

These delicious muffins are made with blueberries, oats, and zero refined sugar, so you can feel good eating more then one.

Ingredients
  

  • 3 medium eggs
  • 160 gr oats
  • 180 gr natural yogurt
  • 80 ml vegetable oil
  • 50 gr almond flour
  • 50 gr flour plain
  • 2 tsp backing powder 10 gr
  • pinch of salt
  • 200 gr dates
  • 200 gr blueberries

Instructions
 

  • Preheat oven to 180°. Spray a 12-count muffin pan with non-stick spray or use cupcake liners.
  • In a food processor add, eggs, oil, yogurt, dates and blend till you got a smooth paste.
  • In a bowl whisk the flour, almond, oats, salt and backing powder.
  • Final step is putting all together, use a large bowl first for the paste and after add the flour combination, one spoon at a time, till all well combined. At the end add the blueberries. Spoon the batter into liners, filling them all the way to the top. Top with almonds or oats and a light sprinkle of coconut sugar, if desired.
  • Bake for 25 minutes, allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
